Takikomi Gohan

Japanese rice cooked in dashi

Takikomi gohan is seasoned rice cooked together with its ingredients directly in dashi and soy sauce, rather than mixed in afterwards.

Chicken, carrot, shiitake and fried tofu give their flavour fully to the rice - an autumnal comfort dish of Japanese families.

Ingredients

  • Japanese rice360 g (2 go)
  • Dashi400 ml
  • Chicken thighs200 g
  • Carrot & shiitakesome of each
  • Aburaage (fried tofu)1
  • Soy sauce, mirin, sake2 tbsp each

Preparation

  1. Wash the rice and drain briefly.

  2. Cut chicken, carrot, shiitake and aburaage small.

  3. Put rice with dashi, soy sauce, mirin and sake in the pot.

  4. Spread the ingredients on top and cook everything together.

  5. Gently fluff before serving.
