Tamagoyaki

Japanese rolled sweet omelette

Tamagoyaki is a rolled Japanese omelette built up layer by layer in a rectangular pan. It belongs equally to breakfast, bento and sushi.

Seasoned with dashi, mirin and a little sugar, it turns tender, juicy and lightly sweet; the fine layering takes some practice and patience.

Ingredients

  • Eggs4
  • Dashi3 tbsp
  • Mirin & soy sauce1 tbsp each
  • Sugar1 tsp
  • Pinch of salt1 pinch
  • Oilsome

Preparation

  1. Whisk eggs with dashi, mirin, soy sauce, sugar and salt.

  2. Oil the rectangular pan and heat gently.

  3. Pour in a thin layer of egg and let it set slightly.

  4. Roll up the omelette, slide to the edge, pour a new layer.

  5. Repeat, then shape and slice.
