Tamagoyaki
Japanese rolled sweet omelette
Tamagoyaki is a rolled Japanese omelette built up layer by layer in a rectangular pan. It belongs equally to breakfast, bento and sushi.
Seasoned with dashi, mirin and a little sugar, it turns tender, juicy and lightly sweet; the fine layering takes some practice and patience.

Ingredients
- Eggs4
- Dashi3 tbsp
- Mirin & soy sauce1 tbsp each
- Sugar1 tsp
- Pinch of salt1 pinch

Preparation
Whisk eggs with dashi, mirin, soy sauce, sugar and salt.
Oil the rectangular pan and heat gently.
Pour in a thin layer of egg and let it set slightly.
Roll up the omelette, slide to the edge, pour a new layer.
Repeat, then shape and slice.
