Filled glutinous rice balls in sweet ginger soup

Tangyuan are glutinous rice balls eaten in China at the Lantern Festival and the winter solstice. Their round shape symbolises family togetherness.

The soft balls are often filled with black sesame paste and served in a sweet, ginger-laced soup – warm and comforting.

Ingredients

  • Glutinous rice flour200 g
  • Warm water160 ml
  • Black sesame paste100 g
  • Sugar60 g
  • Ginger4 slices
  • Cane sugar (for the soup)2 tbsp

Preparation

  1. Knead glutinous rice flour with warm water into a smooth dough.

  2. Form the sesame paste with sugar into small balls.

  3. Portion the dough, enclose the filling, roll into balls.

  4. Simmer ginger and cane sugar in water into a sweet soup.

  5. Cook the balls in it until they float, serve hot.
