Himalayan noodle soup with chicken and vegetables

Thukpa is a warming noodle soup from the mountain regions of Tibet and Nepal that spread across the Himalayas along the trade routes.

In the thin mountain air, the hearty broth with noodles, chicken and vegetables is a nourishing staple - often with a little chilli and coriander.

Ingredients

  • Wheat noodles300 g
  • Chicken breast300 g
  • Ginger-garlic paste1 tbsp
  • Tomato, carrot, cabbagesome of each
  • Cumin & turmeric1 tsp each
  • Chicken broth1.2 l
  • Coriander & chillito serve

Preparation

  1. Fry ginger-garlic with cumin and turmeric.

  2. Add the chicken and sear.

  3. Stir-fry the vegetables briefly, pour in the broth.

  4. Simmer until chicken and vegetables are done.

  5. Cook the noodles in it, serve with coriander and chilli.
