Tinola

Filipino chicken soup with ginger and papaya

Tinola is a clear, comforting Filipino chicken soup cooked in families for generations. It even appears in the national novel Noli Me Tángere.

Chicken is simmered with plenty of ginger; green papaya and chilli-pepper leaves give the broth freshness and a slightly bitter note.

Ingredients

  • Chicken pieces1 kg
  • Ginger4 cm
  • Green papaya (or chayote)1
  • Garlic & onion1 each
  • Fish sauce2 tbsp
  • Chilli-pepper leaves or spinach1 handful
  • Water1.5 l

Preparation

  1. Fry the garlic, onion and ginger.

  2. Add the chicken and sear briefly.

  3. Pour in water and simmer for 30 minutes.

  4. Add the papaya, cook soft, season with fish sauce.

  5. Fold in the leafy greens and let steep briefly.
