Tohu Thoke

Shan salad of chickpea tofu

Tohu thoke is a salad from Myanmar's Shan State, whose “tofu” is made not from soy but from chickpea flour.

The silky chickpea tofu is cut into strips and dressed with tamarind, chilli oil, garlic and peanuts into a fresh, savoury salad.

Ingredients

  • Chickpea flour (besan)150 g
  • Water600 ml
  • Tamarind paste2 tbsp
  • Chilli oil & soy sauce1 tbsp each
  • Garlic & fried onionssome of each
  • Peanuts & corianderto garnish

Preparation

  1. Cook chickpea flour with water and salt into a thick paste.

  2. Pour into a mould and let set, then cut into strips.

  3. Mix tamarind, chilli oil, soy sauce and garlic into a dressing.

  4. Gently toss the tofu strips with the dressing.

  5. Serve with peanuts, fried onions and coriander.
