Fanqie chao dan - stir-fried tomato with egg - is one of the first dishes Chinese children learn to cook and the very essence of home cooking.

Juicy tomatoes and fluffy scrambled egg come together in a gently sweet-sour sauce that pairs perfectly with steaming rice.

Ingredients

  • Tomatoes (ripe)3
  • Eggs4
  • Sugar1 tsp
  • Salt1 pinch
  • Spring onion1
  • Vegetable oil2 tbsp

Preparation

  1. Whisk and salt the eggs.

  2. Scramble fluffy in hot oil, remove.

  3. Fry the tomato pieces until they release their juice.

  4. Season with sugar and salt.

  5. Return the egg, toss briefly, serve with spring onion.
