Filipino eggplant omelette

Tortang talong is a simple, beloved Filipino dish: a grilled eggplant flattened and fried dipped in egg.

Grilling gives the eggplant a smoky aroma; stuffed with mince the version is called rellenong talong - served with rice and banana ketchup.

  • Long eggplants2
  • Eggs3
  • Garlic & onionsome of each

  • Vegetable oil2 tbsp

Preparation

  1. Grill the eggplants soft over an open flame or in the oven.

  2. Peel off the skin and flatten the flesh.

  3. Whisk and season the eggs.

  4. Dip the eggplant in the egg and fry on both sides.

  5. Serve with rice and banana ketchup.
