Mongolian steamed-fried noodles with meat

Tsuivan is a hearty Mongolian noodle dish of homemade noodles that are steamed and then fried with meat and vegetables.

The noodles cook over the meat's steam so they absorb its aroma; a filling everyday dish of the nomadic kitchen.

Ingredients

  • Wheat flour (for noodles)300 g
  • Beef or mutton, sliced400 g
  • Onion2
  • Carrot & cabbage1 handful each
  • Garlic3 cloves
  • Salt & pepperto taste
  • Oil2 tbsp

Preparation

  1. Knead flour with water into a firm dough, roll thin and cut into strips.

  2. Fry the meat with onion and garlic in a pot.

  3. Add the vegetables and a little water.

  4. Steam the noodles over the meat until cooked.

  5. Toss everything together, season with salt and pepper.
