Korean rice cake soup for the New Year
Tteokguk is the traditional Korean soup for Lunar New Year (Seollal). Eating a bowl symbolically means turning a year older.
Thin oval rice cake slices float in a clear beef broth; garnished with egg, nori and spring onion, it is festive and simple at once.

- Rice cake slices (tteok)500 g
- Beef brisket300 g
- Garlic & spring onionsome of each
- Soy sauce & sesame oil1 tbsp each
- Eggs (for garnish)2
- Nori stripssome
- Water1.5 l

Preparation
Soak the rice cake slices in water for 30 minutes.
Boil beef brisket with garlic into a clear broth.
Shred the meat, season the broth with soy sauce.
Cook the rice cakes in the broth until they float soft.
Garnish with egg strips, nori and spring onion.
