Korean rice cake soup for the New Year

Tteokguk is the traditional Korean soup for Lunar New Year (Seollal). Eating a bowl symbolically means turning a year older.

Thin oval rice cake slices float in a clear beef broth; garnished with egg, nori and spring onion, it is festive and simple at once.

  • Rice cake slices (tteok)500 g
  • Beef brisket300 g
  • Garlic & spring onionsome of each
  • Soy sauce & sesame oil1 tbsp each
  • Eggs (for garnish)2
  • Nori stripssome
  • Water1.5 l

Preparation

  1. Soak the rice cake slices in water for 30 minutes.

  2. Boil beef brisket with garlic into a clear broth.

  3. Shred the meat, season the broth with soy sauce.

  4. Cook the rice cakes in the broth until they float soft.

  5. Garnish with egg strips, nori and spring onion.
