Unagi Don

Japanese rice bowl with glazed eel

Unagi don (or unadon) is a rice bowl with grilled freshwater eel glazed in a glossy, sweet-salty kabayaki sauce.

In Japan eel is seen as an invigorating summer food, especially on the “Day of the Ox” - a dish steeped in tradition.

Ingredients

  • Eel (pre-cooked, kabayaki)2 fillets
  • Soy sauce3 tbsp
  • Mirin & sake2 tbsp each
  • Sugar1 tbsp
  • Cooked rice2 bowls
  • Sansho peppersome

Preparation

  1. Reduce soy sauce, mirin, sake and sugar into kabayaki sauce.

  2. Brush the eel fillets with it and glaze in oven or grill.

  3. Arrange rice in bowls.

  4. Cut the eel into pieces and lay over the rice.

  5. Drizzle with sauce and sansho pepper, serve.
