South Indian pancake with vegetable topping

Uttapam is a thick, soft pancake from South India's fermented rice-and-lentil batter - the savoury, topped sister of the crisp dosa.

The batter is cooked in the pan topped with onions, tomatoes and chilli, and served with coconut chutney and sambar.

Ingredients

  • Dosa/uttapam batter (fermented)500 g
  • Onion1
  • Tomato1
  • Green chilli & coriandersome of each
  • Vegetable oilto cook
  • Coconut chutney & sambarto serve

Preparation

  1. Finely dice onion, tomato, chilli and coriander.

  2. Pour a ladle of batter into the hot pan, keep it thick.

  3. Top with the vegetables and press lightly.

  4. Cook covered until the underside is golden, then flip.

  5. Serve with coconut chutney and sambar.
