Vada Pav

Mumbai's spicy potato burger

Vada pav is known as “Mumbai's burger”: a deep-fried, spiced potato dumpling (vada) in a soft roll (pav), served with chutneys.

Created in the 1960s as cheap street food, it is now inseparable from the city - quick, filling and full of flavour.

Ingredients

  • Potatoes500 g
  • Chickpea flour (besan)150 g
  • Mustard seeds & turmeric1 tsp each
  • Green chilli & gingersome of each
  • Curry leaves1 sprig
  • Soft rolls (pav)4
  • Garlic chutneyto serve

Preparation

  1. Boil the potatoes, mash and season.

  2. Season with mustard, turmeric, chilli, ginger and curry leaves.

  3. Form dumplings, coat in besan batter and deep-fry golden.

  4. Slice the rolls, spread with chutney.

  5. Tuck in the vada and serve at once.
