Sweet glazed braised pork ribs

Wuxi spare ribs from the city of Wuxi on Lake Tai belong to Jiangsu cuisine, famed for its sweetish, balanced art of braising.

The ribs braise long in soy sauce, rice wine and sugar until the sauce glistens like syrup and the meat falls off the bone.

Ingredients

  • Pork ribs1 kg
  • Soy sauce (light & dark)3 tbsp each
  • Rice wine (Shaoxing)4 tbsp
  • Rock sugar3 tbsp
  • Ginger & spring onionsome of each
  • Star anise & cinnamonsome

Preparation

  1. Blanch and rinse the ribs.

  2. Set up with soy sauce, rice wine, ginger and spices.

  3. Braise covered about 1 hour until tender.

  4. Add rock sugar and reduce the sauce uncovered.

  5. Turn the ribs in the syrupy glaze, serve.
