Vietnamese sticky rice with chicken

Xôi gà is a filling Vietnamese breakfast of steamed sticky rice crowned with shredded chicken and crisp fried shallots.

The sticky rice is steamed loose and glossy; a savoury chicken topping and a touch of fat make it hearty and nourishing.

Ingredients

  • Sticky rice400 g
  • Chicken thighs400 g
  • Shallots (for fried shallots)4
  • Fish sauce & soy sauce1 tbsp each
  • Ginger1 piece
  • Spring onion oil2 tbsp
  • Peppersome

Preparation

  1. Soak the sticky rice overnight and steam glossy.

  2. Cook the chicken with ginger and shred.

  3. Season with fish and soy sauce and pepper.

  4. Fry the shallots in oil until crisp.

  5. Plate the sticky rice, serve with chicken, fried shallots and oil.
