Thai glass-noodle salad

Yam woon sen is a refreshing Thai glass-noodle salad that celebrates the signature yam balance of sour, spicy, salty and sweet.

Prawns and minced pork, crisp vegetables and a lime-fish-sauce dressing keep it light yet intensely aromatic.

Ingredients

  • Glass noodles (woon sen)150 g
  • Prawns200 g
  • Minced pork100 g
  • Lime juice & fish sauce3 tbsp each
  • Chilli & garlicsome of each
  • Celery, tomato, onion1 handful
  • Peanuts & corianderto garnish

Preparation

  1. Soak the glass noodles and blanch briefly.

  2. Cook prawns and mince in a little water.

  3. Stir lime juice, fish sauce, chilli and garlic into a dressing.

  4. Toss noodles, seafood and vegetables with the dressing.

  5. Scatter with peanuts and coriander, serve cold.
