Yangnyeom Chicken

Korean fried chicken in a sweet-spicy glaze

Yangnyeom chicken is the glazed version of Korean fried chicken, which has swept the country since the 1970s. “Yangnyeom” means “seasoned”.

Double-fried chicken is tossed in a sticky sauce of gochujang, garlic and honey – crisp, sweet and fiery all at once.

Ingredients

  • Chicken pieces800 g
  • Potato starch6 tbsp
  • Gochujang3 tbsp
  • Honey & rice syrup2 tbsp each
  • Garlic & gingersome of each
  • Soy sauce & rice vinegar1 tbsp each
  • Sesameto sprinkle

Preparation

  1. Salt the chicken and coat generously in potato starch.

  2. Pre-fry at 160 °C, let rest briefly.

  3. Fry again at 190 °C until crisp.

  4. Simmer gochujang, honey, rice syrup, garlic and vinegar into a sauce.

  5. Toss the chicken in it, sprinkle with sesame, serve at once.
