Festive fried rice from the city of Yangzhou

The fried rice of Yangzhou on the Yangtze is considered China's most refined. Already in the Qing era it was a dish for special occasions.

Its hallmark is the many fine ingredients – egg, shrimp, ham and peas – that coat each grain without weighing it down.

Ingredients

  • Cooked rice (day-old)500 g
  • Eggs3
  • Shrimp, peeled100 g
  • Cooked ham, diced80 g
  • Peas & carrot1 handful
  • Spring onion2
  • Soy sauce & saltto taste

Preparation

  1. Beat the eggs and scramble into flakes in a hot wok, remove.

  2. Sear the shrimp briefly, then add ham and vegetables.

  3. Add the cold rice and stir-fry loosely over high heat.

  4. Return the egg, season with soy sauce and salt.

  5. Fold in spring onion and serve at once.
