Spicy Korean shredded beef soup

Yukgaejang is a robust, spicy soup of shredded beef slowly simmered with vegetables and gochugaru (chilli flakes).

In Korea it is regarded as a warming, restorative meal - once a festive dish, now a beloved classic on cold days.

Ingredients

  • Beef brisket500 g
  • Gochugaru (chilli flakes)3 tbsp
  • Leek & bean sprouts1 handful each
  • Fernbrake (gosari)100 g
  • Garlic & sesame oilsome of each
  • Soy sauce2 tbsp
  • Egg1

Preparation

  1. Simmer the brisket tender, keep the broth, shred the meat.

  2. Toast gochugaru in sesame oil with garlic into a paste.

  3. Add meat, paste and soy sauce to the broth.

  4. Add leek, sprouts and fernbrake, simmer.

  5. Stir in beaten egg, season, serve with rice.
