Spicy Korean shredded beef soup
Yukgaejang is a robust, spicy soup of shredded beef slowly simmered with vegetables and gochugaru (chilli flakes).
In Korea it is regarded as a warming, restorative meal - once a festive dish, now a beloved classic on cold days.

Ingredients
- Beef brisket500 g
- Gochugaru (chilli flakes)3 tbsp
- Leek & bean sprouts1 handful each
- Fernbrake (gosari)100 g
- Garlic & sesame oilsome of each
- Soy sauce2 tbsp
- Egg1

Preparation
Simmer the brisket tender, keep the broth, shred the meat.
Toast gochugaru in sesame oil with garlic into a paste.
Add meat, paste and soy sauce to the broth.
Add leek, sprouts and fernbrake, simmer.
Stir in beaten egg, season, serve with rice.
