Zaru Soba

Cold buckwheat noodles with dip

Zaru soba are buckwheat noodles served chilled on a bamboo tray (zaru) - the quintessential Japanese summer dish.

The noodles are dipped into a cool tsuyu of dashi, soy sauce and mirin; wasabi and spring onion add freshness and depth.

Ingredients

  • Soba (buckwheat noodles)200 g
  • Dashi200 ml
  • Soy sauce & mirin50 ml each
  • Wasabi1 tsp
  • Spring onion1
  • Nori stripssome

Preparation

  1. Boil dashi, soy sauce and mirin into tsuyu, let cool.

  2. Cook the soba per the packet.

  3. Immediately chill in iced water and drain.

  4. Arrange the noodles on the bamboo tray, scatter with nori.

  5. Serve with tsuyu, wasabi and spring onion for dipping.
