Japanese sweet adzuki bean soup with mochi

Zenzai is a warm, sweet adzuki bean soup in which grilled mochi rice cakes float - a wintry comfort dessert of Japan.

The beans are cooked with sugar into a thick, slightly chunky sweetness; a pinch of salt lifts the sweetness.

  • Adzuki beans200 g
  • Sugar150 g
  • Mochi (rice cakes)4
  • Salt1 pinch
  • Water1 l

Preparation

  1. Soak the adzuki beans and cook soft.

  2. Add sugar and reduce into a thick sweet soup.

  3. Season with a pinch of salt.

  4. Grill or toast the mochi until they puff.

  5. Put mochi in bowls, pour over the hot bean soup.
