Aloo Paratha

Potato-stuffed flatbread

Aloo paratha is a hearty flatbread stuffed with spiced potato - a beloved breakfast in northern India and Punjab.

Wholewheat dough is filled with a potato-spice mash, rolled flat and pan-fried golden on the tawa - classically with yoghurt and butter.

Ingredients

  • Wholewheat flour (atta)300 g
  • Potatoes (boiled)400 g
  • Green chili & coriandersome of each
  • Cumin & garam masala1 tsp each
  • Gheefor frying
  • Saltto taste

Preparation

  1. Knead atta with water into a smooth dough, rest.

  2. Mash the potatoes, mix with chili, coriander and spices.

  3. Stuff dough balls and gently roll flat.

  4. Fry on the tawa with ghee golden on both sides.

  5. Serve with yoghurt and butter.
