Red tortoise cakes with mung bean

Ang ku kueh are red, tortoise-shaped glutinous rice cakes of Peranakan culture in Malaysia and Singapore.

The tortoise shape and red colour symbolise luck and long life at festivities and birthdays.

Ingredients

  • Glutinous rice flour250 g
  • Peeled mung beans150 g
  • Sugar100 g
  • Red food colouringa little
  • Banana leavesseveral
  • Oilsome

Preparation

  1. Cook the mung beans and work with sugar into a paste.

  2. Knead rice flour with water and colouring into a red dough.

  3. Flatten the dough and fill with bean paste.

  4. Press into an oiled tortoise mould.

  5. Steam on banana leaves for about 10 minutes.
