Ankake Yakisoba
Crispy noodles with thick sauce
Ankake yakisoba are Japanese-Chinese fried noodles, pan-fried crisp and doused in a thick sauce.
The sauce of seafood and vegetables is thickened with cornstarch, keeping the noodles crisp on top and soft below.

- Chinese egg noodles300 g
- Mixed seafood200 g
- Napa cabbage & carrot200 g
- Chicken broth400 ml
- Cornstarch2 tbsp
- Soy sauce & sesame oilsome of each

Preparation
Pan-fry the noodles crisp and place on a plate.
Stir-fry seafood and vegetables.
Pour in broth and soy sauce.
Thicken into a sauce with cornstarch slurry.
Pour the sauce over the crispy noodles.
