Ankake Yakisoba

Crispy noodles with thick sauce

Ankake yakisoba are Japanese-Chinese fried noodles, pan-fried crisp and doused in a thick sauce.

The sauce of seafood and vegetables is thickened with cornstarch, keeping the noodles crisp on top and soft below.

Ingredients

  • Chinese egg noodles300 g
  • Mixed seafood200 g
  • Napa cabbage & carrot200 g
  • Chicken broth400 ml
  • Cornstarch2 tbsp
  • Soy sauce & sesame oilsome of each

Preparation

  1. Pan-fry the noodles crisp and place on a plate.

  2. Stir-fry seafood and vegetables.

  3. Pour in broth and soy sauce.

  4. Thicken into a sauce with cornstarch slurry.

  5. Pour the sauce over the crispy noodles.
