Sweet yeast bun with red bean paste

Anpan is a soft Japanese yeast bun filled with sweet red bean paste, first created in 1874 by a baker in Tokyo.

It married Western baking with the Japanese love of anko and became a beloved classic, often scattered with sesame.

Ingredients

  • Wheat flour300 g
  • Sweet red bean paste (anko)250 g
  • Yeast & sugarsome of each
  • Milk & buttersome of each
  • Egg (for brushing)1 piece
  • Sesamesome

Preparation

  1. Knead a yeast dough of flour, milk, sugar and butter, let rise.

  2. Portion the dough and press flat.

  3. Fill with anko and seal all around.

  4. Let rise again seam-side down.

  5. Brush with egg, scatter sesame and bake golden.
