Sweet yeast bun with red bean paste
Anpan is a soft Japanese yeast bun filled with sweet red bean paste, first created in 1874 by a baker in Tokyo.
It married Western baking with the Japanese love of anko and became a beloved classic, often scattered with sesame.

- Wheat flour300 g
- Sweet red bean paste (anko)250 g
- Yeast & sugarsome of each
- Milk & buttersome of each
- Egg (for brushing)1 piece
- Sesamesome

Preparation
Knead a yeast dough of flour, milk, sugar and butter, let rise.
Portion the dough and press flat.
Fill with anko and seal all around.
Let rise again seam-side down.
Brush with egg, scatter sesame and bake golden.
