Glass noodles with spiced ground pork
Mayi shang shu, ants climbing a tree, is a Sichuan classic of glass noodles with finely minced pork.
The poetic name pictures the little bits of meat clinging to the glossy noodle strands like ants on twigs.

Ingredients
- Glass noodles150 g
- Ground pork200 g
- Doubanjiang (bean paste)1 tbsp
- Garlic & gingersome of each
- Soy sauce & brothsome of each
- Spring onion1 stalk

Preparation
Soak the glass noodles.
Fry the pork with garlic and doubanjiang.
Add soy sauce and a little broth.
Stir in the glass noodles and let them soak up the liquid.
Serve scattered with spring onion.
