Glass noodles with spiced ground pork

Mayi shang shu, ants climbing a tree, is a Sichuan classic of glass noodles with finely minced pork.

The poetic name pictures the little bits of meat clinging to the glossy noodle strands like ants on twigs.

Ingredients

  • Glass noodles150 g
  • Ground pork200 g
  • Doubanjiang (bean paste)1 tbsp
  • Garlic & gingersome of each
  • Soy sauce & brothsome of each
  • Spring onion1 stalk

Preparation

  1. Soak the glass noodles.

  2. Fry the pork with garlic and doubanjiang.

  3. Add soy sauce and a little broth.

  4. Stir in the glass noodles and let them soak up the liquid.

  5. Serve scattered with spring onion.
