Apam Balik

Folded peanut pancake

Apam balik is a thick, folded pancake from Malaysia, crisp at the edge and airy in the middle.

Classically it is filled with ground peanuts, sugar and a touch of corn or butter, then folded over.

  • Wheat flour200 g
  • Egg1 piece
  • Baking powder & sodasome of each
  • Ground peanuts100 g
  • Sugar60 g
  • Butter & cornsome of each

Preparation

  1. Whisk flour, egg, raising agents and water into a batter, rest.

  2. Pour batter into a hot pan, draw the edge up.

  3. Scatter with peanuts, sugar and corn.

  4. Dot with butter until bubbles rise.

  5. Fold over and cut into pieces.
