Fermented rice pancakes from Kerala

Appam is a bowl-shaped rice pancake from Kerala with a soft centre and crisp lacy edges.

The batter of rice and coconut milk is fermented and cooked in a special wok-shaped pan.

  • Rice300 g
  • Coconut milk200 ml
  • Cooked rice100 g
  • Yeast or toddy1 tsp
  • Sugar1 tbsp
  • Salt1 tsp

Preparation

  1. Soak the rice and grind it fine.

  2. Mix with coconut milk, yeast and sugar into a batter.

  3. Let it ferment for several hours.

  4. Pour batter into a hot appam pan and swirl.

  5. Cover and cook until the centre is set.
