Appam
Fermented rice pancakes from Kerala
Appam is a bowl-shaped rice pancake from Kerala with a soft centre and crisp lacy edges.
The batter of rice and coconut milk is fermented and cooked in a special wok-shaped pan.

Ingredients
- Rice300 g
- Coconut milk200 ml
- Cooked rice100 g
- Yeast or toddy1 tsp
- Sugar1 tbsp
- Salt1 tsp

Preparation
Soak the rice and grind it fine.
Mix with coconut milk, yeast and sugar into a batter.
Let it ferment for several hours.
Pour batter into a hot appam pan and swirl.
Cover and cook until the centre is set.
