Sour-spicy fish stew from Malacca

Assam pedas, literally sour and spicy, is a Malay fish stew that defines the cuisine of Malacca and Johor.

Tamarind brings the sourness, a chili paste the heat; okra and tomato plus laksa leaf (daun kesum) often join in.

Ingredients

  • Fish (e.g. mackerel)600 g
  • Tamarind2 tbsp
  • Dried chilies8 pieces
  • Shallots & garlicsome of each
  • Okra & tomatosome of each
  • Laksa leaf (daun kesum)some

Preparation

  1. Grind chilies, shallots and garlic into a paste.

  2. Fry the paste until fragrant.

  3. Pour in water and tamarind.

  4. Add fish, okra and tomato.

  5. Simmer until the fish is done, serve with daun kesum.
