Mixed vegetables in coconut from Kerala

Avial is a Kerala dish in which a medley of vegetables is cooked in a paste of coconut and cumin.

A finish of coconut oil and curry leaves, plus yoghurt for a mild tang, makes it the centrepiece of the Sadya feast.

Ingredients

  • Mixed vegetables500 g
  • Grated coconut150 g
  • Cumin & green chilisome of each
  • Yoghurt100 g
  • Coconut oil2 tbsp
  • Curry leaves & turmericsome of each

Preparation

  1. Cut the vegetables into batons and cook with turmeric.

  2. Grind coconut, cumin and chili into a paste.

  3. Stir the paste through the vegetables and cook briefly.

  4. Stir in yoghurt, do not boil further.

  5. Finish with coconut oil and curry leaves, serve.
