Avial
Mixed vegetables in coconut from Kerala
Avial is a Kerala dish in which a medley of vegetables is cooked in a paste of coconut and cumin.
A finish of coconut oil and curry leaves, plus yoghurt for a mild tang, makes it the centrepiece of the Sadya feast.

- Mixed vegetables500 g
- Grated coconut150 g
- Cumin & green chilisome of each
- Yoghurt100 g
- Coconut oil2 tbsp
- Curry leaves & turmericsome of each

Preparation
Cut the vegetables into batons and cook with turmeric.
Grind coconut, cumin and chili into a paste.
Stir the paste through the vegetables and cook briefly.
Stir in yoghurt, do not boil further.
Finish with coconut oil and curry leaves, serve.
