Balinese spiced chicken

Ayam betutu is a Balinese festive dish in which a whole chicken is rubbed with the intense spice paste base genep.

Traditionally wrapped in banana leaves and slow-cooked, the paste of chili, turmeric, galangal and candlenut permeates the meat.

Ingredients

  • Whole chicken1.2 kg
  • Red chilies8 pieces
  • Turmeric, galangal & gingersome of each
  • Candlenut (kemiri) & shallotssome of each
  • Lemongrass & lime leavessome of each
  • Banana leavesfor wrapping

Preparation

  1. Grind all the spices into base genep paste and fry.

  2. Rub the chicken inside and out with the paste.

  3. Stuff with some paste and wrap in banana leaves.

  4. Slow-cook in oven or steam until tender.

  5. Unwrap and serve with rice.
