Ayam Bumbu Rujak

Chicken in sweet and spicy coconut sauce

Ayam bumbu rujak is a Javanese chicken dish in a sweet and spicy, bright red spice sauce.

Chili, palm sugar, tamarind and coconut milk give the sweet-sour-spicy balance typical of rujak.

Ingredients

  • Chicken pieces800 g
  • Red chilies & shallotssome of each
  • Coconut milk300 ml
  • Palm sugar & tamarindsome of each
  • Lemongrass & lime leavessome of each
  • Garlic & saltsome of each

Preparation

  1. Grind chilies, shallots and garlic into a paste.

  2. Fry the paste with lemongrass.

  3. Add the chicken and sear.

  4. Deglaze with coconut milk, palm sugar and tamarind.

  5. Braise until the chicken is done and the sauce thick.
