Smashed crispy chicken with sambal
Ayam geprek is a modern Indonesian dish of crisp fried chicken smashed with spicy sambal in a mortar.
It arose in the 2000s in Yogyakarta and quickly became a favourite of students and street stalls.

- Chicken pieces500 g
- Flour & cornstarchsome of each
- Bird's eye chili10 pieces
- Garlic & shallotssome of each
- Lime & saltsome of each
- Oil for fryingplenty

Preparation
Bread the chicken and fry crisp.
Pound chili, garlic and shallots into sambal.
Mix salt and a little hot oil into the sambal.
Lightly smash the crisp chicken in the mortar.
Combine with sambal and serve with rice.
