Smashed crispy chicken with sambal

Ayam geprek is a modern Indonesian dish of crisp fried chicken smashed with spicy sambal in a mortar.

It arose in the 2000s in Yogyakarta and quickly became a favourite of students and street stalls.

Ingredients

  • Chicken pieces500 g
  • Flour & cornstarchsome of each
  • Bird's eye chili10 pieces
  • Garlic & shallotssome of each
  • Lime & saltsome of each
  • Oil for fryingplenty

Preparation

  1. Bread the chicken and fry crisp.

  2. Pound chili, garlic and shallots into sambal.

  3. Mix salt and a little hot oil into the sambal.

  4. Lightly smash the crisp chicken in the mortar.

  5. Combine with sambal and serve with rice.
