Malay roast chicken in coconut spice sauce
Ayam golek is a Malay roast chicken marinated in a rich coconut spice sauce and grilled.
The sauce of chili, lemongrass and coconut milk is applied repeatedly until the chicken glistens golden.

- Coconut milk300 ml
- Chili & shallotssome of each
- Lemongrass & galangalsome of each
- Turmeric & coriandersome of each
- Palm sugar & saltsome of each

Preparation
Grind the spices into a paste.
Fry the paste and deglaze with coconut milk.
Marinate the chicken in the sauce and pre-cook.
Cook on the grill.
Brush repeatedly with the sauce until it glistens.
