Malay roast chicken in coconut spice sauce

Ayam golek is a Malay roast chicken marinated in a rich coconut spice sauce and grilled.

The sauce of chili, lemongrass and coconut milk is applied repeatedly until the chicken glistens golden.

  • Chicken pieces1 kg
  • Coconut milk300 ml
  • Chili & shallotssome of each
  • Lemongrass & galangalsome of each
  • Turmeric & coriandersome of each
  • Palm sugar & saltsome of each

Preparation

  1. Grind the spices into a paste.

  2. Fry the paste and deglaze with coconut milk.

  3. Marinate the chicken in the sauce and pre-cook.

  4. Cook on the grill.

  5. Brush repeatedly with the sauce until it glistens.
