Fried chicken with galangal flakes

Ayam goreng lengkuas is a Javanese fried chicken first braised in galangal and spices.

The grated galangal cooked with it is fried crisp and scattered over the chicken as a fragrant garnish.

  • Chicken pieces800 g
  • Galangal (lengkuas)100 g
  • Garlic & shallotssome of each
  • Turmeric & coriandersome of each
  • Lemongrass & lime leavessome of each
  • Oil for fryingenough

Preparation

  1. Grate the galangal and grind with spices into a paste.

  2. Braise the chicken with the paste and water until soft.

  3. Remove the chicken and let drain.

  4. Fry the chicken crisp in hot oil.

  5. Fry the grated galangal and scatter on top.
