Chicken in red chili tomato sauce

Ayam masak merah is a Malaysian festive dish often served at weddings and to break the fast.

Fried chicken is braised in a bright red sauce of chili paste, tomatoes and onions.

  • Chicken pieces800 g
  • Dried chili paste3 tbsp
  • Tomatoes & tomato pastesome of each
  • Onions2
  • Ginger & garlicsome of each
  • Sugar & saltsome of each

Preparation

  1. Lightly fry the chicken pieces and set aside.

  2. Fry chili paste with onions and garlic.

  3. Add tomatoes and tomato paste.

  4. Braise the chicken in the sauce.

  5. Season with sugar and salt.
