Ayam Pansuh

Chicken cooked in bamboo from Sarawak

Ayam pansuh is an Iban dish from Sarawak on Borneo, in which chicken is cooked inside a bamboo tube.

Lemongrass, ginger and the aromatic tapioca leaf give the chicken its unmistakable fragrance.

Ingredients

  • Chicken pieces800 g
  • Lemongrass3 stalks
  • Ginger & garlicsome of each
  • Tapioca or banana leavesseveral
  • Bamboo tube1
  • Saltto taste

Preparation

  1. Mix the chicken with lemongrass, ginger and garlic.

  2. Line the bamboo tube with leaves.

  3. Fill in the chicken and seal.

  4. Cook over open fire or in the oven.

  5. Tip out of the tube into a bowl and serve.
