Indonesian smashed fried chicken

Ayam penyet - "smashed chicken" - is a popular Javanese dish: spiced boiled then fried chicken, flattened with a mortar.

It is served on fiery sambal that seeps into the meat as it is pressed, with raw vegetables and rice.

Ingredients

  • Chicken pieces4 pieces
  • Turmeric & garlicsome of each
  • Fresh red chilies6 pieces
  • Shallots & tomatosome of each
  • Shrimp paste (terasi)1 tsp
  • Oil for fryingplenty

Preparation

  1. Boil the chicken with turmeric and garlic until cooked and seasoned.

  2. Then fry golden.

  3. Pound a sambal of chilies, shallots, tomato and terasi.

  4. Press the chicken flat on the sambal with a mortar.

  5. Serve with raw vegetables and rice.
