Nyonya chicken braise with soybean paste

Ayam pongteh is a Nyonya braise of the Peranakan culture of Malacca, blending Chinese and Malay influences.

Chicken and potatoes braise in fermented soybean paste (taucheo) with palm sugar into a sweet-savoury sauce.

Ingredients

  • Chicken pieces800 g
  • Fermented soybean paste (taucheo)3 tbsp
  • Potatoes300 g
  • Shallots & garlicsome of each
  • Palm sugar & dark soy saucesome of each
  • Shiitake4 pieces

Preparation

  1. Grind shallots and garlic into a paste and fry.

  2. Stir in taucheo and fry until aromatic.

  3. Add the chicken and brown.

  4. Braise with water, palm sugar and soy sauce.

  5. Cook potatoes and shiitake along until soft.
