Ayam Taliwang

Spicy grilled chicken from Lombok

Ayam Taliwang comes from the village of Karang Taliwang on the Indonesian island of Lombok and is one of its most famous specialties.

A young chicken is coated with a fiery paste of dried chilies, garlic, tomato and palm sugar, then grilled over charcoal.

Ingredients

  • Chicken (halved)1 piece
  • Dried chilies8 pieces
  • Garlic & shallots4 each
  • Tomato1 piece
  • Palm sugar1 tbsp
  • Shrimp paste (terasi)1 tsp
  • Lime1 piece

Preparation

  1. Pound chilies, garlic, shallots, tomato and terasi into a paste.

  2. Fry the paste briefly with palm sugar.

  3. Rub the chicken with the paste.

  4. Grill over charcoal, basting several times.

  5. Serve with lime and rice.
