Acehnese chicken under fried leaves

Ayam tangkap is a specialty from Aceh in which spiced chicken is fried and hidden under a mound of crispy leaves.

Curry leaves, pandan and fried shallots give the dish its unmistakable aroma.

  • Chicken pieces800 g
  • Curry leaves & pandan1 handful each
  • Garlic & gingersome of each
  • Turmeric & chilisome of each
  • Shallots6
  • Oil for fryingenough

Preparation

  1. Marinate the chicken with garlic, ginger, turmeric and chili.

  2. Fry the chicken in hot oil.

  3. Fry the curry leaves and pandan crisp.

  4. Fry the shallots.

  5. Arrange the chicken under the fried leaves.
