Taiwanese dumpling with a glassy skin
Ba wan is a large Taiwanese dumpling with a translucent, chewy skin of sweet potato and rice starch.
Filled with pork and bamboo, it comes from Changhua and is served with a sweet-savoury red sauce.

Ingredients
- Sweet potato starch150 g
- Rice flour50 g
- Pork250 g
- Bamboo shoots & shiitakesome of each
- Soy sauce & five-spicesome of each
- Red rice sauce (topping)as desired

Preparation
Marinate the pork with bamboo and spices.
Mix starch and rice flour with water into a sticky batter.
Put a layer of batter in a bowl, place filling on top.
Cover with batter and steam until the skin is translucent.
Douse with red sauce and serve.
