Taiwanese dumpling with a glassy skin

Ba wan is a large Taiwanese dumpling with a translucent, chewy skin of sweet potato and rice starch.

Filled with pork and bamboo, it comes from Changhua and is served with a sweet-savoury red sauce.

Ingredients

  • Sweet potato starch150 g
  • Rice flour50 g
  • Pork250 g
  • Bamboo shoots & shiitakesome of each
  • Soy sauce & five-spicesome of each
  • Red rice sauce (topping)as desired

Preparation

  1. Marinate the pork with bamboo and spices.

  2. Mix starch and rice flour with water into a sticky batter.

  3. Put a layer of batter in a bowl, place filling on top.

  4. Cover with batter and steam until the skin is translucent.

  5. Douse with red sauce and serve.
