Babi Guling

Balinese suckling pig with spice paste

Babi guling is a festive dish from Bali in which a whole piglet is stuffed with a rich spice paste and roasted on a spit.

The paste called basa gede of turmeric, galangal and chili permeates the meat while the skin turns crisp.

  • Pork roast with skin2 kg
  • Turmeric & galangal1 piece each
  • Chili & garlicsome of each
  • Lemongrass2 stalks
  • Shallots6
  • Salt & oilsome of each

Preparation

  1. Pound the spices into a paste (basa gede).

  2. Rub the meat generously with the paste inside.

  3. Brush the skin with salt and oil.

  4. Roast slowly over moderate heat.

  5. Roast until the skin is crisp, then carve.
