Babi Kecap

Pork in sweet soy sauce

Babi kecap is an Indonesian-Chinese braise of pork in sweet soy sauce.

Kecap manis, garlic and a little star anise give the tender meat a dark, glossy sauce.

  • Pork belly600 g
  • Sweet soy sauce (kecap manis)4 tbsp
  • Garlic & shallotssome of each
  • Star anise1
  • Soy sauce1 tbsp
  • Pepper & oilsome of each

Preparation

  1. Dice the pork belly and sear.

  2. Add garlic and shallots.

  3. Deglaze with kecap manis and soy sauce.

  4. Add star anise and water and braise.

  5. Cook until the meat is tender and the sauce thick.
