Sweet-glazed grilled pork

Bak kwa is a sweet-savoury grilled jerky of thinly spread minced pork, rooted in the Hokkien tradition.

In Singapore and Malaysia it is a sought-after gift for Chinese New Year, drawing long queues.

Ingredients

  • Ground pork500 g
  • Sugar100 g
  • Fish sauce & soy sauce1 tbsp each
  • Five-spice powder1 tsp
  • Honey2 tbsp
  • Shaoxing wine1 tbsp

Preparation

  1. Marinate the pork with sugar, sauces and spices.

  2. Spread thinly on baking paper.

  3. Pre-dry in the oven.

  4. Cut into pieces and brush with honey.

  5. Caramelise over charcoal or in the oven, serve.
