Indonesian vegetable fritters
Bakwan are crispy Indonesian vegetable fritters of shredded cabbage, carrot and bean sprouts in a seasoned batter.
They are an ubiquitous market snack and are happily eaten with whole bird's eye chilies.

- Cabbage & carrot300 g
- Bean sprouts100 g
- Wheat flour120 g
- Garlic & shallotssome of each
- Spring onion & celerysome of each
- Oil for fryingplenty

Preparation
Cut the vegetables into fine strips.
Whisk flour, garlic, water and seasonings into a batter.
Mix the vegetables into the batter.
Fry in portions in hot oil.
Drain crisp and golden, serve with chili.
