Indonesian vegetable fritters

Bakwan are crispy Indonesian vegetable fritters of shredded cabbage, carrot and bean sprouts in a seasoned batter.

They are an ubiquitous market snack and are happily eaten with whole bird's eye chilies.

Ingredients

  • Cabbage & carrot300 g
  • Bean sprouts100 g
  • Wheat flour120 g
  • Garlic & shallotssome of each
  • Spring onion & celerysome of each
  • Oil for fryingplenty

Preparation

  1. Cut the vegetables into fine strips.

  2. Whisk flour, garlic, water and seasonings into a batter.

  3. Mix the vegetables into the batter.

  4. Fry in portions in hot oil.

  5. Drain crisp and golden, serve with chili.
