Burmese crispy dried shrimp relish

Balachaung is a Burmese relish of dried shrimp, made with plenty of crisply fried garlic and shallots.

Savoury, salty and crunchy, it is eaten as a keepable companion to plain rice.

Ingredients

  • Dried shrimp150 g
  • Garlic1 bulb
  • Shallots4 pieces
  • Chili powder1 tbsp
  • Tamarind1 tbsp
  • Oil & saltsome of each

Preparation

  1. Finely grind the dried shrimp.

  2. Fry garlic and shallots crisp in oil.

  3. Toast the shrimp in the same oil.

  4. Stir in chili powder and tamarind.

  5. Cook down crisp, cool and keep in a jar.
