Steamed rice cakes from Huế

Bánh bèo are small steamed rice cakes from the imperial city of Huế, served in tiny dishes with a dimple in the middle.

Topped with dried shrimp, crispy pork-fat croutons and scallion oil, they are drizzled with diluted fish sauce.

Ingredients

  • Rice flour & tapioca starch200 g
  • Dried shrimp50 g
  • Crispy pork-fat croutonssome
  • Scallion oil2 tbsp
  • Fish sauce (diluted)to serve
  • Saltsome

Preparation

  1. Whisk rice flour with water into a thin batter.

  2. Fill into small dishes and steam.

  3. Grind the dried shrimp into floss.

  4. Top the cakes with shrimp, croutons and oil.

  5. Serve drizzled with diluted fish sauce.
