Vietnamese honeycomb cake from rice flour
Banh bo is a steamed Vietnamese rice cake with a characteristic honeycomb structure.
Rice flour, coconut milk and sugar are fermented with a little yeast, creating the airy bite.

- Rice flour200 g
- Tapioca starch60 g
- Coconut milk250 ml
- Sugar150 g
- Yeast1 tsp
- Pandan extract1 tsp

Preparation
Stir rice flour and tapioca starch with coconut milk.
Add sugar and yeast.
Let the batter rise for several hours.
Fill into oiled moulds.
Steam for about 20 minutes until honeycombs form.
