Translucent tapioca dumplings from Hue
Bánh bột lọc are translucent dumplings of tapioca starch, a specialty of the central Vietnamese imperial city of Hue.
Shrimp and pork belly shimmer through the glassy wrapper; they are served with a sweet-spicy fish sauce.

- Tapioca starch250 g
- Shrimp200 g
- Pork belly150 g
- Shallots2 pieces
- Fish sauce & sugarsome of each
- Scallion oilsome

Preparation
Braise shrimp and pork belly with shallots until savoury.
Mix tapioca starch with boiling water into a dough.
Portion the dough and press flat.
Add filling and seal into half-moons.
Boil until translucent, serve with fish sauce.
