Translucent tapioca dumplings from Hue

Bánh bột lọc are translucent dumplings of tapioca starch, a specialty of the central Vietnamese imperial city of Hue.

Shrimp and pork belly shimmer through the glassy wrapper; they are served with a sweet-spicy fish sauce.

Ingredients

  • Tapioca starch250 g
  • Shrimp200 g
  • Pork belly150 g
  • Shallots2 pieces
  • Fish sauce & sugarsome of each
  • Scallion oilsome

Preparation

  1. Braise shrimp and pork belly with shallots until savoury.

  2. Mix tapioca starch with boiling water into a dough.

  3. Portion the dough and press flat.

  4. Add filling and seal into half-moons.

  5. Boil until translucent, serve with fish sauce.
